It’s a rare occurrence when someone is able to make a career out of a personal passion, let alone find a passion at all. Considering this, some might call Thom Capizzi, owner and head baker of Thom’s BREAD, lucky. Throughout the last year, Thom and his talented team of bakers and salespeople have been fortunate enough to turn a love of bringing fresh, artisan breads to the people of Lancaster into a fully functioning business. Since November of 2012, Thom’s BREAD has grown from a man baking breads in his home kitchen for the enjoyment of his friends and family into a much-loved and supported local institution run out of an industrial-grade bakery.

The key to Thom’s success is the simplicity with which he approaches his product. “Water, flour, salt, and yeast. That’s it,” Thom says, when asked about the basic ingredients that go into each loaf of bread. None of Thom’s breads, whether it be a savory option like his newly developed focaccia bread or a sweat treat like his chocolate boule made with Wilbur Buds from Wilbur Chocolate in Lititz, PA, contain any preservatives or additives; this assures the baking company’s customers that no matter which bread they choose, they’ll always be bringing home a fresh and clean tasting product.
