If I had to use one word to describe Lancaster, I think it would be – Delicious. Our beautiful little piece of the world is filled with fields of fresh and organic fruits and vegetables. Rijuice bottles up all those things to create delicious juice blends. The other day, I found myself strolling around market when I bumped into Mike from RiJuice. We got to talking and he mentioned the numerous ways he has heard people around town using their juice as an ingredient. One that caught my attention was a dressing – which sparked my thought to incorporate it into a marinade, which led me to our main event…
Asian Marinated Chicken Breast
Here’s what you’ll need to make the protein portion of our meal! (Serves 2-3)
1-1.5 lbs chicken breasts
1/4 Cup of RiJuice (Sunshine Daydream)
1/4-1/2 Cup low sodium soy sauce
2 small cloves garlic, minced
2 heaping TBS honey
1 tsp dried onion
Put your chicken in a tupperware container with a lid or a gallon bag and set aside.
In a small bowl, pour 1/4 Cup of soy sauce. Add RiJuice’s Sunshine Daydream, minced garlic, dried onion and honey. The honey gives it some sticking power and cuts the saltiness of the soy sauce. Whisk briefly, pour mixture over chicken, and let marinate for 1 hour (Overnight is alright, too.) Sear 4-5 minutes per side on a hot skillet for color. Place on greased baking sheet and bake at 350 for 15-20 minutes. Let chicken rest 5 minutes before cutting.
Bacon Wrapped Asparagus
Here’s what you’ll need to make your prepared side.
1/2 Bushel of Asparagus
4 Strips of Bacon
1 TBS Balsamic Vinegar
2 TBS Parmesan
1/2 Tablespoon EVOO
1 tsp Salt
1 tsp Garlic Powder
1 tsp Onion Powder
In a second small bowl, add all the above (sans bacon) & liquids first. Once all ingredients are combined, mix thoroughly (with hands or tongs) in order to coat the asparagus evenly. Afterward, group your asparagus into four bundles and roll-it-up with one slice of bacon. Once you place your chicken in the oven for it’s 15-20 minute shift, you can place the bacon wrapped asparagus in a pan set to medium-to-low heat, rotating it every 3-4 minutes. Continue doing so for the 25 minutes the chicken will take to cook and rest.
Towards the end, I threw together just a simple side of Herb Pearled Couscous, a 5 minute fluff side just to keep me feeling full! You can begin this about ten minutes (ahh, you almost forgot to account for the boiling water, huh) before you plan to plate.
It tasted like all the freshest ingredients of Lancaster County carefully concocted into one delicious meal. It tasted, like the Rijuice blend is cleverly named, a sunshine daydream. It tasted like the “life in a bottle” that is Rijuice, exploded all its wonderful flavors onto our plates.
It tasted amazing. Almost as amazing as I felt seeing local friends out and about achieving their dreams, pressing to provide Lancaster with a product with a purpose.
