After Maddy Pontz and I essentially licked our tray clean of a Horse Inn burger and French fries (for our special series on finding Lancaster’s best burgers), head chef and co-owner Matt Russell brought us out an ice cream sandwich on a heavy, glazed ceramic plate.
And what is this amazingness? I promptly asked myself. Matt told us exactly what was wedged inside two perfectly scalloped round chocolate cookies:
meadow tea-flavored ice cream + chocolate chips
I was supposed to share with fellow co-workers, Chris Ruch and Maddy, but I ended up being so excited with childhood wonder that I licked the entire outside of the sandwich. Oops. My mistake. (Not actually a mistake at all. I’m just really bad at sharing delicious dessert.)
