As Kelly Kapinos reflected on her past twelve years at Lily’s on Main in Ephrata, she has now placed herself in a position to take over ownership of Reflections Restaurant on East Oregon Road in Manheim Township.
Since joining the Reflections team as General Manager in April 2013, she expects the transfer of ownership to take place in April 2015. But, before that happens, in conjunction with current owner Jim Garland and Chef Kerek Shoff, she is planning some well-thought-out changes.
Some of those changes have been put into place with additions to the menu, produce from Harvest Lane Farms (a farm stand just down the road), and her hand-picked meat and protein purveyor from Philadelphia, Exceptional Foods, Inc., who supplies meats and specialty foods to the renown Philadelphia Stephen Starr restaurants.
Aside from the food at Reflections, subtle changes are being made that are not so subtle to Kelly. For instance: undraping the tabletops, refinishing the bar and swapping out table tents for beautiful Pinterest-style wine bottle labels, listing Reflections’ featured wines.
Kelly says, “Reflections will always be a tavern,” but she and the others want to turn it into an epic, hip tavern. The food and beverages, including craft beers, are being taken up a notch and folks are beginning to take notice, as business has picked up through word of mouth.
Monday night, Wing Night, has seen four times the amount of business recently. On Wednesdays, the new Gourment Burger Night has taken off, when new styles of burgers are introduced to customers, using Reflections’ unique blend of beef for its burgers – filet, short rib and brisket.
While the changes are engaging, some regulars will be glad their favorites will remain on the menu. As Kelly says, “Liver is a customer favorite that I can’t change, and the Chicken with Crab Imperial has never been off the menu.”
What has been added to the menu is a new section of “Small Plates,” featuring such offerings as fish tacos with cucumber citrus salsa and sweet Asian slaw, ahi tuna flatbread melt and a local pork duo of fried pork belly, grilled pork cheeks and avocado black bean relish.
When talking about some of the changes and additions, the excitement Kelly has with her new endeavor at Reflections is…, well, reflected in her eyes.
