I’ve been on this crazy vegetarian kick lately for which I will usually apologize (to all the meat eaters who read my posts). However, I am not apologizing for this upcoming recipe. I decided to make some burritos over the weekend, but wanted to make them healthier. Sometimes burritos can weigh me down like a bag of bricks with all the meat, cheese, and rice.
However, I started looking up funky burrito recipes and found a substitute for rice. Cauliflower Rice. Not only was it easy to make (literally chopping it up very small–use a food processor or cheese grater to cheat), but it also made me feel like a million bucks after scarfing down the burrito!
Fun Side Note: Cauliflower will greatly reduce your carbohydrate intake if you substitute it for regular rice.
