OK, so technically this is not a breakfast dish. However, if you were to start your day with it, that day would most certainly turn out well.
Chef Andrew Aho of POUR on Prince has achieved a delicate balance of flavors with the earthy fresh mushroom blend, the perfect six-minute egg, and the unctuous, salty/wonderful bacon jam. Capped perfectly with the creamy goat cheese mousse (where just goat cheese would have overpowered the dish, the mousse imparts a lighter touch to harmonize with the heavier bacon and mushrooms), this dish is a triumph.
Unfortunately, now, your bowl of cornflakes tomorrow morning will just be an embarrassment to your palate.
